I must confess, I had a hard time getting used to the idea of a lemon pie. I couldn’t quite imagine its taste and I thought it would be too acid. Nevertheless, I’ve decided to accept the challenge last Saturday. I followed this recipe, but true to myself, I simplified things a little bit, and I switched the classic flour crust for a biscuit one. And the results? Wonderful! This pie has striked the perfect balance between sweet and tart and I can’t wait to make it again, next time in a little, cupcake-sized version.
